Caffeinated Cookies

Peanut butter banana cookies with a caffeinated kick. Vegan, gluten-free, dairy-free, refined sugar-free and protein-packed, these may be the tastiest cookies I’ve ever made! They’re delicious topped on oatmeal and smoothies, and perfect to have pre/post workout or as a snack.

Ingredients:

  • 1/2 cup vanilla protein powder

  • 1/2 cup powdered peanut butter

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • 1.5 cups almond flour

  • 1/2 tsp apple cider vinegar

  • 1 cup cold brew (any plant milk works too)

  • 1 banana, mashed

  • Chopped walnuts

Instructions:

Preheat oven to 350F. Mix the dry ingredients together and then stir in the wet. Last, fold in the banana and walnuts. Scoop out the dough and place it onto a lined cookie sheet. Use a fork to press down slightly for that classic peanut butter cookie aesthetic. Bake for 10-14 minutes, let cool and enjoy!
