Baked Oatmeal

The first time I tried baking my oatmeal, I was SOLD after that first bite. Since then, I’ve been making different combinations with the same base of ingredients. From there, you can totally get creative and make up your own flavors! Any combo tastes like a nourishing cake and is so satisfying.

Baked oatmeal is perfect for when you have a little extra time in the morning. You can even meal prep to enjoy later— just keep it sealed in the fridge. Get ready for your kitchen to smell amazing!!

Ingredients:

  • 1/2 banana, mashed

  • 1/2 cup rolled oats

  • 1/2 tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp maca (optional)

  • 1 Tbsp chia & 1 Tbsp flax seeds

  • 1 egg white (optional, but gives it fluff)

  • Scoop of protein powder

  • Scoop of collagen (optional)

  • Splash of vanilla extract

  • 1/2 cup plant milk

Recipe makes a single serving. If you’re going to double, triple, etc., leave the baking powder measurement the same.

Instructions:

Preheat oven to 350F. Mix all ingredients together and pour into an oven-safe dish sprayed with coconut oil. Bake for about 25 minutes (until the top is dry and golden brown). Let cool for a few minutes, then add toppings. Delicious options are nut butter, yogurt and any nuts/seeds for crunch. Enjoy!

Apple Cinnamon Baked Oats

  • 1/2 tsp apple pie spice (optional)

  • 1/2 chopped apple + extra slices for topping

Blueberry Açaí Baked Oats

  • 1 Tbsp açaí powder

  • Fresh or frozen blueberries

Carrot Cake Baked Oats

  • 1/4 tsp nutmeg

  • 1/3 cup shredded carrots

  • 1 Tbsp chopped walnuts + extra for topping

Cherry vanilla baked oats

  • Pinch sea salt

  • Handful fresh pitted cherries

Add all ingredients to a food processor, and blend until smooth.

  • 1/2 banana

  • 1 chia egg (1 Tbsp chia seeds + 3 Tbsp water)

  • 1/3 cup oats

  • 1 Tbsp cacao powder

  • 1/4 tsp baking powder

  • 1/4 cup plant milk

Pour half into ramekin and add tahini. Pour rest over and add chocolate chips.

Coconut Matcha Baked Oats

  • 1 tsp matcha powder

  • 1 Tbsp coconut shreds

  • Banana slices for topping

Gingerbread Baked Oats

  • 1/2 tsp ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp ground cloves

  • Molasses or maple syrup (optional)

Lemon Raspberry baked oats

  • 1 tsp date or maple syrup

  • 1 tsp lemon juice

  • 1 tsp lemon zest + extra for topping

  • 1/4 cup frozen raspberries

  • 1 Tbsp chopped walnuts for topping (optional)

peaches n cream baked oats

  • 1/2 cup berries (raspberries or blueberries)

  • 1 apricot, chopped

  • Peach or nectarine slices & yogurt for topping

Peanut Butter & jelly Baked Oats

  • 1 Tbsp peanut butter + more for topping

  • Berry jam (I make my own raspberry jam by cooking 1 cup raspberries with 1/4 cup water + 2 Tbsp chia seeds at a simmer until jam consistency is achieved)

Pumpkin PB Chocolate Chip baked oats

Add all ingredients to a food processor, and blend until smooth.

  • 1 Tbsp pumpkin puree

  • 1 Tbsp peanut butter

  • 1/2 tsp pumpkin spice

Pour into ramekin and add chocolate chips.

Pumpkin Pie Baked Oats

  • 1/2 tsp pumpkin spice

  • 1/3 cup pumpkin puree

Raspberry Turmeric Baked Oats

  • 1/2 tsp turmeric

  • Pinch of black pepper (to activate the turmeric)

  • Fresh or frozen raspberries

Tropical Baked Oats

  • 1 Tbsp coconut shreds

  • 1 chopped kiwi or pineapple chunks + extra for topping
