Loaded Sweet Potato Boat
If I could eat one food for the rest of my life, it would be sweet potatoes. Not only are they delicious and easy to cook, they’re so versatile! I’ll stuff a sweet potato with just about anything.
Looks fancy but is actually super simple to put together. By microwaving a sweet potato, the meal comes together in minutes! You can also slice into “toasts” and bake them. If I’m craving a savory combo, I’ll sauté spinach and/or kale, add mashed avocado, everything bagel seasoning, an egg, crushed pepper and sometimes salmon, tuna or chickpeas. Tastes beyond amazing and is so satisfying!
If I want something sweet, I’ll top with nut butter, fruit, yogurt, granola or nuts/seeds. Eating healthy doesn’t have to be complicated! With a loaded sweet potato meal, you’re sure to get in a good serving of veggies, carbs, protein and fats.
