Papaya Boat
Bringing you all the tropical vibes with an easy, tasty and healthy breakfast idea: a loaded papaya boat.
Papayas contain vitamins, antioxidants, have anti-inflammatory properties, and digestive enzymes that reduce bloating. They are easily one of my favorite fruits and such a tasty treat any time of day. I love making a breakfast boat and freezing the rest for smoothies. Thank goodness it’s always papaya season in Florida!
So simple to make: slice open a papaya in half, scoop out the seeds and fill with your heart’s desires! Amazing options are yogurt, chia pudding, oats, fresh fruit toppings, cereal, granola, seeds, nut butter. Endless possibilities! Bonus points for eating in the papaya. Such a fun idea that’s not only beautiful, but nutritious and delicious. I’ll happily sail away on this boat!
My go-to, classic recipe is crunchy yet incredibly creamy. Combine yogurt (plain Fage or coconut by GTS or Culina), 1-2 scoops collagen, 1 Tbsp chia seeds, 1 Tbsp hemp seeds, 1 Tbsp flax seeds, 1 tsp maca, frozen wild blueberries, fresh blackberries, 1/2 cup Ezekiel golden flax cereal, nut butter (almond or Kween), and 1 tsp bee pollen in a bowl. Transfer the mixture into a papaya half, or scoop some papaya into the mixture, and enjoy! So satisfying and never gets old.
