Cottage Cheese Egg Bake

Elevate your at-home brunch with this easy and delicious recipe. Protein-packed and adjustable to your liking. A real crowd-pleaser in my household!

Ingredients:

  • 1 cup cottage cheese

  • 8 eggs

  • Lots of fresh spinach

  • 1/4 red onion, diced

  • Basil, chopped

  • Tomatoes, halved

Instructions:

Preheat oven to 400F. In a bowl, crack the eggs and whisk. Stir in cottage cheese, add spinach, onion and basil. Oil a casserole dish and pour in the egg mixture. Top with tomatoes. Cook for 45 minutes, or until the eggs are golden. Highly recommend serving with smoked salmon or salmon burger and asparagus. Enjoy!
