Salmon Tacos
In honor of Cinco de Mayo and #TacoTuesday, I’m bringing you one of my favorite summertime recipes! A simple, flavorful dish that’s perfect to enjoy outside in these upcoming warm months (or anytime!). It’s one of those meals I never get bored with because it’s so easy to switch up and tastes delicious. My salmon taco obsession is real.
Ingredients I love:
2 tortillas (cassava flour, plantain, corn or jicama), warmed on a pan until crispy
Mashed avocado
Riced cauliflower or riced vegetable mix (cauli, broccoli, zucchini, carrot, onion)
Black beans, pico de gallo, cilantro
Mushrooms
Tomatoes
Salmon (fresh or leftover tastes amazing)
Fresh lime squeeze
Hot sauce if desired
