Salmon Tacos

In honor of Cinco de Mayo and #TacoTuesday, I’m bringing you one of my favorite summertime recipes! A simple, flavorful dish that’s perfect to enjoy outside in these upcoming warm months (or anytime!). It’s one of those meals I never get bored with because it’s so easy to switch up and tastes delicious. My salmon taco obsession is real.

Ingredients I love:

  • 2 tortillas (cassava flour, plantain, corn or jicama), warmed on a pan until crispy

  • Mashed avocado

  • Riced cauliflower or riced vegetable mix (cauli, broccoli, zucchini, carrot, onion)

  • Black beans, pico de gallo, cilantro

  • Mushrooms

  • Tomatoes

  • Salmon (fresh or leftover tastes amazing)

  • Fresh lime squeeze

  • Hot sauce if desired
