Sweet Potato Pesto Quesadilla
Ingredients:
2 tortillas
1 small-medium sweet potato, cooked and peeled
1-2 Tbsp pesto, divided
1 tsp avocado oil
Handful of greens (spinach, kale, arugula)
Veggies of choice (mushrooms, zucchini, red bell pepper)
Seasonings of choice (everything bagel, garlic, basil)
Microgreens (optional)
Instructions:
Bring a large pan to medium heat. Warm the tortillas. Spread pesto onto both tortillas and then mash the sweet potato on top of each. Add seasonings. Oil the pan and rotate to thoroughly spread around. Sauté your veggies and greens. Remove and place on top of one tortilla, then top with the other. Press down to stick everything together. Place in pan and cook each side until browned and crispy (about 4-5 minutes each). Remove and slice the quesadilla. Optional sprinkle of microgreens.
Recipe makes one quesadilla.
